Fried Rice

Asian, Main Entree, Side Dish

Ingredients

1 tablespoon butter

2 large eggs

1 tablespoon vegetable oil

4 cups jasmine rice, cooked in chicken or vegetable stock, cooled

1 ½ cups frozen peas and carrots

3 tablespoons soy sauce

1 teaspoon sesame oil

6 green onions, just the white parts, thinly sliced

Directions

Melt butter in large skillet over low heat.

In a small bowl, beat eggs. Add the beaten eggs to the skillet and cook over medium low heat, breaking them up with a spatula, until cooked. Remove and set aside on a plate.

Heat vegetable oil in the skillet over medium high heat.

Add rice and vegetables, and onions and saute for 1-2 minutes to combine ingredients.

Combine the soy sauce and sesame oil together and pour over rice mixture in the pan. Break up rice well to distribute the soy sauce and oil.

Cook the rice for another 10 minutes or so. Add the scrambled eggs back into skillet near the end and heat through.

Notes

This is an attempt to copy Panda Express fried rice.

Made 1/2 recipe for Hudson and I and there were about 2-3 big helpings left over. Def 1/2 recipe is plenty. Hudson and I both liked it.
